Chef Gong’s newest signature dish – New Zealand Lamb Rack
Head Chef Peter Gong of Kathleen’s 5 Rooftop Restaurant introduces his newest signature dish: New Zealand Lamb Rack with Carrot and Potato Gratin and Ratatouille Jus.
"This is a great addition to our menu," says Chef Gong. Succulent lamb from New Zealand – prized for its mild taste and tender texture – is roasted along with a rich carrot and potato gratin, then garnished with a ratatouille jus.
Other signature dishes include:
- Citrus Cured Ocean Trout Carpaccio with Baby Cress, Radish and Pink Grapefruit Vinaigrette.
- Crispy Pigeon with Shiitake Mushroom and Star Anise Broth, Yam Puree and Chinese Cabbage Roll.
- Baked Nougat Alaska with Orange Caramel Sauce.
